{"id":537,"date":"2013-06-15T07:21:35","date_gmt":"2013-06-15T12:21:35","guid":{"rendered":"http:\/\/staging2.butchrenfroe.com\/?p=537"},"modified":"2013-06-15T07:21:35","modified_gmt":"2013-06-15T12:21:35","slug":"pancakes","status":"publish","type":"post","link":"https:\/\/butchrenfroe.com\/index.php\/2013\/06\/15\/pancakes\/","title":{"rendered":"Renfroe&#8217;s Not From a Box Pancakes"},"content":{"rendered":"<p>I found a recipe that is pretty close to the Cracker Barrel pancakes.<\/p>\n<p>2 cups sifted all-purpose flour<br \/>\n2 teaspoons baking soda (NOT BAKING POWDER!)<br \/>\n1 teaspoon salt<br \/>\n1 tablespoon sugar<br \/>\n2 eggs<br \/>\n2 cups buttermilk<br \/>\noil or butter (for cooking)<\/p>\n<p>Sift together in a mixing bowl the flour, baking soda, salt and sugar. \u00a0In a separate bowl, whisk the eggs and buttermilk. \u00a0Pour the wet stuff on the dry stuff.<\/p>\n<p>This part is important. Mix 10 or 12 times with a large whisk. \u00a0It will be lumpy. \u00a0Don&#8217;t worry about that. \u00a0Just go do something for 10 minutes or so for your batter to rest and your flour particles to soak up the liquid. Something like heat up your griddle.<\/p>\n<p>Heat your griddle to where a drop of water will dance around when dropped on it, or about 350\u00b0 F.<\/p>\n<p>Before cooking, lube up your griddle with butter or cooking spray. Do this before each batch. (I recommend butter because&#8230;you know&#8230;BUTTER!)<\/p>\n<p>Spoon out your batter to a disk about the size of a saucer. \u00a0Wait for bubbles to form and the edges to get a little dry then flip and cook about another minute and half or two minutes.<\/p>\n<p>Enjoy.<\/p>\n<p>Oh, and you don&#8217;t have buttermilk handy, just do this:<\/p>\n<p>Add one tablespoon of vinegar per cup of regular or 2% milk and let sit for 5 minutes.
